How to Prepare & Cook a Grass-Fed, Grass-Finished Steak

 

We've provided a step-by-step guide to prepare and cook grass-fed and grass-finished steaks. These steps ensure the steaks stay tender, flavorful, and juicy, as grass-fed beef is leaner and cooks faster than grain-fed beef.

Preparation

1. Thaw the Steak (if frozen): 

Thaw in the refrigerator overnight for best results.
Alternatively, use the cold water method by submerging the sealed steak in water for 30-60 minutes.


2. Bring to Room Temperature:
Remove the steak from the refrigerator 30-60 minutes before cooking. This ensures even cooking.

3. Season the Steak:

Pat the steak dry with paper towels.
Rub both sides with salt and freshly ground black pepper.
Optional: Add garlic powder, smoked paprika, or other seasonings.
Let the seasoning sit for 15-20 minutes.

4. Preheat Your Pan or Grill:

Heat a cast iron skillet, grill, or heavy-bottomed pan over medium-high heat for a few minutes.
Add a small amount of oil (avocado oil, ghee, or another high-smoke-point fat) if pan-searing.

 

Cooking

1. Sear the Steak:

Place the steak in the hot skillet or on the grill.
Sear for 2-3 minutes per side to create a golden crust.

2. Adjust Heat and Cook to Temperature:

 

For pan-searing: Lower the heat to medium.
For grilling: Move the steak to a cooler part of the grill.

Cook for an additional 1-3 minutes per side, depending on thickness and desired doneness:

 

Rare: 120-125°F
Medium Rare: 130-135°F
Medium: 140-145°F (not recommended to go beyond this for grass-fed beef).
Use a meat thermometer to ensure accuracy. Grass-fed beef cooks quickly and can easily overcook.

 

3. Rest the Steak:

Transfer the steak to a plate or cutting board and tent loosely with foil.
Let rest for 5-10 minutes to allow juices to redistribute.

Tips for Success


Do not overcook: Grass-fed beef is leaner and can become tough if cooked beyond medium.
Marinade (optional): For extra flavor and tenderness, marinate the steak for 2-4 hours in a mixture of olive oil, vinegar, garlic, and herbs before cooking.
Use a thermometer: Visual cues can be tricky; a thermometer ensures perfect doneness.
